Bloggin with Coconuts

Exerpts from my journal while in the village!

“You know how you never actually use all the ink in a pen. You either lose, replace, or break it before hand. Well, I have succeeded in finishing the ink in, not 1, not 2, but 4 pens. I only brought 4 pens with me. Thank goodness I still have the pen that Cheridynn gave out as a scavenger hunt prize back in New Zealand. I’m definitely using some of my perdiem once we get to Suva and buying a new pen or two. Apparently, I’m learning that i don’t lose or break pens. If only that was true with pencils too.

I LOVE coconut Trees. Not only do they grow coconuts (obviously) but their leaves are also usable to make handmade stuff! Today we used the stems of the leaves and wrapped cloth around them to make baskets. The plant is so Amazing and has so many creative uses. Lets also not forget the coconuts themselves. Not only is coconut water delicious but it is also super hydrating and full of electrolytes so it is the perfect snack for after working in the sun all day. The meat itself is delicious but the real prize is the milk you can squeeze out of the shredded meat. Coconut milk has been used in the preparation of almost half of our foods we have eaten while here in the village. I have always liked coconut but now i LOVE coconut and truly appreciate how it can be used as an ingredient in food. The best part though is having the half shell left over from the coconut. Smoothing out the surface and inside with spare pieces of glass has been so fun the last few days and now i have a coconut bowl to bring home!”

I have now bought a new pen and am no longer in fear of having to resort to my pencil.
I still love coconuts and want to add an appreciation of banana trees to my list as well! I also got some help from my home stay family and now have a basket and a better looking coconut bowl then the one I attempted.
